Cinnamon Streusel Cheesecake Bites

These mini cheesecake bites are easy to make and are packed with cinnamon flavor. Sandwiched between a crisp graham cracker crust and a crunchy cinnamon streusel topping, this rich and creamy recipe is mouth-watering!

Ingredients

Crust:
1 sleeve of graham crackers (9 full crackers), crushed
5 tablespoon melted butter
2 tablespoons sugar

Cheesecake:
16 ounces cream cheese, room temperature
1 cup granulated sugar
3 large eggs, room temperature
¼ cup sour cream, room temperature
1 tablespoon LorAnn Oils Pure Vanilla Extract 
½ teaspoon salt

Streusel Topping:
½ cup all-purpose flour
½ cup brown sugar
½ cup old-fashioned rolled oats
½ teaspoon salt
3 tablespoons LorAnn Oils Cinnamon Spice Bakery Emulsion
¼ cup room temperature butter

Directions

Crust:
1. Preheat oven to 375° F.
2. Place liners in muffin pan.
3. Combine ingredients in a bowl, stirring until butter is evenly distrusted.
4. Scoop 1 tablespoon of the mixture into each liner, pressing firmly with fingers until flat.
5. Bake for 8 minutes.
6. Using the flat part of a bottle cap, press the still hot crust again to ensure it is compact.
7. Let cool.

Streusel Topping:
1. Combine ingredients in a mixing bowl.
2. Using a fork, work the butter into the mixture until fully combined.
3. Spread into an even layer (about 1/8” thick) on a lined baking sheet.
4. Bake at 350° F. for 30 minutes.

Cheesecake:
1. Preheat oven to 325° F.
2. In a stand mixer, beat cream cheese and sugar on medium speed for two minutes.
3. Add in sour cream, vanilla, and salt. Beat until combined.
4. Add in eggs one at a time. Once all are incorporated, beat for another minute.
5. Using ¼ cup measuring scoop, fill each liner (with the crust in the bottom) until only ¼” is left on top.
6. Bake for 25-30 minutes, until a thermometer inserted into the center reads 150° F.
7. Let cool on counter until room temperature, transfer to refrigerator and let chill overnight.

Assembly:
1. Remove cheesecake bites from liners.
2. Crumble streusel into small pieces, sprinkle on top of the cheesecake bites.
3. Drizzle with maple syrup for an extra kick of flavor, and enjoy!
