An all-natural antioxident to reduce rancidity.  For manufacturers placing ingredient labels on their finished products, Preserve-it Antioxidant-Natural needs only be listed on your product's ingredient list as a natural flavor.

General use guide: use 1-3/4 teaspoons to each 5 lbs of butter or oil (or other fat) in your recipe.  Preserve-It Antioxidant can be added at any convenient mixing step.

Should this 'Natural - Antioxidant' be stored in the refrigerator since it contains almond oil? I only ask because nut oils can go rancid. Thank you.

Would either of your antioxidant products be appropriate for extending the life of a caramel recipe (heavy cream, butter, corn syrup, sugar)? Over time (6 weeks) sometimes the texture changes.

Would this help with extending the life of your hard cardy recipe?

LorAnn's Response: Hello, Maz. Our hard candy recipe doesn't include fat or oil. The Preserve-It products extend the shelf life of recipes that have a high fat content by slowing the fats from becoming rancid. Typical shelf-life issues with a standard hard candy stem from moisture. The sugar in the finished candy will draw in moisture from the air, causing hard candies to become sticky. To help with this, use Hi-Sweet in place of the liquid corn syrup. We also recommend working in a low-humidity kitchen. Adding food-grade desiccants to your packaging will also help control the moisture.

Hi, would this help with sugar cookies with either butter cream, cream cheese or royal icing? Sometimes I ship internationally.
Does the sweet almond change the flavor when adding other emulsions or extracts?

LorAnn's Response: Our anti-oxidant will help reduce the rancidity caused by butter or other types of fat, so it will work great for the butter and cream cheese components. The sweet almond oil base does not have a flavor and will not change the way your finished goods taste.

Hi! Would this be helpful in extending the shelf life of cream cheese mints (cream cheese, butter or margarine, powdered sugar)? I would like to mail some, but worry about them spoiling in a day or two, even with cold packing. Thanks!

LorAnn's Response: Hi, Sue! Either of the antioxidants will work well to reduce rancidity in a high fat candy like cream cheese mints. For every 5lbs of fat in your recipe, you will want to add 1 3/4tsp of the antioxidant.

Hi, i just want to know would this help with making candy fruit to last more then 2 hours before the candy part start to breakdown. Like grapes, strawberries, etc. And with a soft taffy?

LorAnn's Response: Hello! Fruit contains quite a bit of water. Even with the Hi-Sweet, your candy will likely breakdown faster when it's enrobing real fruit.

Can this product be used in chocolate candies?

LorAnn's Response: Hello! This product has an oil base and should combine well with chocolate. The purpose of this product is for slowing the oxidation of high fat candies, extending the shelf-life. If you are creating something like chocolate covered caramels, add the antioxidant to the caramel, which usually contains butter or heavy cream.

Can I add this to my Buckeye Candy recipe made of peanut butter, butter, vanilla & pow. sugar. I usually keep my finished buckeyes in the freezer, but, I would love to keep them on their counter for a month if I want too without them going bad. How long of a shelf-life would this give me?

LorAnn's Response: Hi, Ann! You can definitely add this to your buckeyes to help prevent rancidity from the fat. Shelf-life is contingent on many factors beyond preservatives, like packaging, temperature at time of packaging, and storage conditions, so it is difficult to say how long your candies will last.

How could I list this as just “natural flavoring”when it is made from sweet almond oil... is that not an allergen?
