Whip up these easy, wholesome Sprinkle Energy Bites for a fun back-to-school snack! Made with creamy cashew butter, rolled oats, protein powder, colorful sprinkles, and LorAnn® Better Than Extracts™ Organic Almond Bakery Emulsion, these no-bake bites are easy to make, kid-friendly, and perfect for lunchboxes, after-school snacks, or anytime you need a quick grab-and-go treat.

Ingredients

1 cup (256 g) creamy cashew butter (or seed butter)
½ cup (160 g) pure maple syrup
1 teaspoon (5 mL) LorAnn® Better Than Extracts™ Organic Almond Bakery Emulsion*
1 ½ cups (120 g) old-fashioned rolled oats
¼ cup (28 g) flaxseed meal
½ cup (50 g) vanilla protein powder
2 tablespoons (28 g) coconut oil melted and cooled
¼ cup (40 g) jimmies sprinkles
3 tablespoons (30 g) jimmies sprinkles for rolling
*If you don't have the LorAnn® Better Than Extracts™ Organic Almond Bakery Emulsion you can substitute the non-organic version.

Make the mixture. In a large bowl, combine the cashew butter, maple syrup, and LorAnn® Better Than Extracts™ Organic Almond Bakery Emulsion. Stir with a sturdy spatula or large spoon until well combined.

Add the rolled oats, flaxseed meal, and vanilla protein powder and stir until almost combined. Add the melted and cooled coconut oil and stir until evenly incorporated. Fold in ¼ cup (40 g) of the sprinkles.

Chill. Place the bowl in the freezer for about 10 minutes or in the refrigerator for about 20 minutes. Chilling the mixture will make the energy bites easier to shape.

Scoop and shape. Place the remaining 3 tablespoons (30 g) sprinkles in a shallow dish. Using a ½-tablespoon measuring spoon or small cookie scoop, scoop the mixture and roll between your palms to form evenly shaped balls.

You should have about 30 energy bites. Roll each energy bite in the sprinkles, then arrange in a single layer on a parchment-lined baking sheet.

Store: Keep these sprinkle energy bites in the fridge, up to two weeks or keep in the freezer for about 3 months.
