INGREDIENTS

Lemon Cream:
3/4 cup chilled heavy whipping cream
4 ounces cream cheese
3 tablespoons confectioners' (powdered) sugar
1 teaspoon LorAnn Lemon Bakery Emulsion or 1/8 teaspoon LorAnn Lemon Oil

Berries:
2 pounds mixed fresh berries, such as blueberries, raspberries, blackberries, and sliced strawberries
3/4 cup seedless raspberry preserves
1/3 cup confectioners' (powdered) sugar

DIRECTIONS

  1. Combine heavy whipping cream, cream cheese, 3 tablespoons powdered sugar and Lemon Bakery Emulsion in a large bowl; beat until soft peaks form. (Can be made up to 2 hours in advance. Keep refrigerated until ready to use) 
  2. In a large bowl, stir together the raspberry preserves and 1/3 cup powdered sugar until smooth. Add berries and stir gently to combine. 
  3. Divide berry mixture between 8 dessert cups or martini glasses. Top each with a dollop of lemon cream. Serve immediately.
